    • Step 1: Prepare the Pie Crust In a large mixing bowl, combine flour, salt, and sugar. Cut in the chilled butter using a pastry cutter (or your fingers) until the mixture resembles coarse crumbs. Gradually add ice water, 1 tbsp at a time, mixing until the dough just comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
    • Step 2: Make the Apple Filling In a large bowl, toss the sliced apples with lemon juice. Add brown sugar, granulated sugar, cinnamon, nutmeg, cornstarch, and vanilla extract. Mix until evenly coated. Let the mixture sit for 15-20 minutes to allow the juices to release.
    • Step 3: Assemble the Pie Preheat oven to 375°F (190°C). Roll out one dough disc on a lightly floured surface into a 12-inch circle. Transfer to a 9-inch pie dish. Pour the apple filling into the crust, dot with small pieces of butter. Roll out the second dough disc and cut into decorative leaf shapes (or create a lattice if preferred). Arrange over the pie. Brush the crust with egg wash (beaten egg mixed with milk) and sprinkle with coarse sugar.
